Instructions
- Cut the avocados in half lengthwise, remove the pits and slice the flesh lengthwise into strips. Scoop them out with a spoon and separate them.
- Put the all-purpose flour in a shallow dish. In another, mix the chickpea flour with the rice flour, cornstarch, vinegar, salt, pepper and water. Put the breadcrumbs in a third.
- Heat plenty of oil over medium heat (175-180°C / 350°F). Dredge the avocado strips in the flour, the liquid mixture and the breadcrumbs.
- Fry them for about 30 seconds, turning them so they cook on all sides, and transfer them to a wire rack lined with paper towels. Serve hot or warm, with a sauce or dip.
- In the oven: preheat the oven to 220°C (425°F), place the coated strips on a baking sheet lined with parchment paper, a little apart, and bake for 15 minutes, turning them halfway. If they brown too quickly, take them out 1 or 2 minutes early.
