Instructions
- Chop the onion and garlic.
- Add the olive oil to a large, deep skillet, turn the heat to medium and heat the oil until it shimmers.
- Add the onion and salt, and lower the heat to medium-low.
- Sauté the onion until golden, 12 to 15 minutes.
- Add the garlic and keep sautéing for 1 to 2 minutes.
- Add the tomato paste and turn the heat up to medium. Cook until the tomato turns a deep red (2-3 minutes).
- Take the sauce off the heat and add the vodka, coconut milk and nutritional yeast.
- Stir to combine and put the skillet back on the heat.
- Bring to a gentle simmer and let the alcohol from the vodka cook off, about 30 minutes.
- Cook the pasta according to the package directions, saving 1 cup (240 ml) of the pasta water in case you need to thin the vodka sauce.
- If the sauce is too thick, add the pasta water a quarter cup at a time.
- Add the cooked pasta straight to the finished sauce and stir to coat well.
- Garnish with fresh basil to taste, if you like.
