Instructions
- In a bowl, mix the gluten with the flour and salt. Add the water, soy sauce and liquid smoke and mix well. Knead for 3-4 minutes, just until it doesn't tear easily. Cover and let it rest for at least 2 hours somewhere warm and dry.
- Wash the vegetables. Cut the zucchini, pepper and carrots into thin sticks and the mushrooms into small pieces. Chop the garlic.
- Mix the vegetables in a bowl with the garlic, thyme, peppers, a pinch of salt and the vegan cream cheese (if using).
- Pat the seitan dry with paper towels and roll it out into a rectangle no wider than the pot you'll cook it in.
- Put the vegetables on the first quarter of the seitan, along the short side, without reaching the edges. Roll it up very tightly and wrap it snugly in aluminum foil or a roasting net.
- Bring plenty of water to a boil in a large pot and add the roll (if the water doesn't cover it, add more). When it boils, lower the heat to medium-low and simmer for 30-40 minutes, depending on how thick it is. Keep an eye on it, turn it and add water if needed.
- Take out the seitan and let it cool. You can freeze it to reheat another day.
- To serve, reheat it in the oven or a skillet, with a sauce or side.
