Instructions
- Preheat the oven to 200 °C. Cut off the top of the round squash like a lid and scoop out the seeds. Drizzle the inside with a little oil, add a pinch of pepper and roast for about 40 minutes, until tender and golden.
- Meanwhile, in a large pot over low heat with a little oil, sauté the chopped onion until it starts to turn translucent.
- Add the bell pepper, carrot and garlic, all finely chopped, and let them cook for a few minutes.
- Pour in the red wine, stir and wait for the alcohol to evaporate.
- Add 1 cup of broth, the tomatoes, the corn pieces, the potatoes and the butternut squash, peeled and diced, the finely chopped dried apricots and the seitan.
- Season with paprika, cumin, pepper and salt, and simmer for 1 to 1½ hours, adding broth if needed: it should be juicy, not soupy.
- Take the squash out of the oven, carefully scoop out some of the flesh, mash it and stir it into the stew to give it body.
- Fill the squash with the piping hot carbonada and bring it to the table whole so everyone can help themselves.
- If you like it spicy, quickly sauté chopped scallion with paprika, oil and chili, and spoon it on top when serving.
